I bought this as being a bit of an amateur cook I'm continually on the look out for brands and equipment to augment my kitchen utensils.I picked the Miyabi knife as a single purchase and test.The knife itself is extremely well made and cuts extremely well. It's not dish-washer approved and indeed they advise against it so you'll need to wash and dry this by hand which is a pain in the butt but then again most knives nowadays, stainless steel or otherwise, suffer heavily in dishwashers that use salt. The construction is as imagined and the edge is superb.The real competition to this particular knife are the ceramic blades. They are harder and YES I sense the edge is keener, they are also less costly. The drawback with ceramic blades then is the brittleness of the blade and I have broken one to date and obviously the specialist sharpener.It's difficult to compare this knife as although in terms of material it's more durable I have yet to need to sharpen it so I don't know if that would swing it against a ceramic blade (which do go into dish washers without issues.)All in all, a better look and more aesthetically appealling knife but I think the ceramic may be better in terms of pure fuinctionality.
