Superb chef's knives

I bought these knives with money given to me to buy a present. The knives themselves are extremely sharp and are very well balanced. They are a pleasure to use. (I also have a set of Wusthof Trident knives which are also very good but not quite as razor sharp).I have only given four stars as the presentation case is OK but not up to the standard of the knives. For a gift box fine, but dosn't really look robust enough for regular storage, not like the beautiful box the JC Novelli knives come in for instance.

Super-sharp beautifully balanced knives

..Use with care! These things do what they say on the box; which seems to be cut everything as if it wasn't there, including our fingers on Christmas day (until we realised that our blunt-knife practices weren't sufficient for these babies..) They look great with the grain of the layered steel and handle perfectly.

I was looking for a set of kitchen knives when I heard Heston Blumenthal on Desert Island Discs choose Tojiro Senkou knives as his luxury. So I bought these.The knives are beautifully made and the blades have a pattern on them like wood grain; they look almost organic.They are well balanced and are a delight to use.The accompanying leaflet recommends using a whetstone for sharpening, but I bought the Tojiro Senkou ceramic sharpener and it works a treat. The sharpener was expensive and I suspect that a cheaper one with ceramic wheels would do the same job.When buying a sharpener, ensure that it sharpens both sides of the blade.Sharpen them regularly and they'll keep cutting like new for a lifetime.
