5Top quality and razor sharp!

Top quality item, beautifully designed and the knives are razor sharp. The block is sturdy with a good strong magnet and there are plastic strips fitted to prevent scratching of the knives. It is really useful having both sides of the block magnetised allowing for flexibility for which side you place the Shen knives (and any other knives you use can go on the other side). Well packed and promptly delivered by courier. The block and knives look incredibly smart and impressive sitting on the kitchen worktop (the black with silver design works great in the kitchen); more to the point (no pun intended!) the knives are superbly crafted and really are razor sharp cutting through foods as if they were butter. Absolutely delighted and I would highly recommend this item and seller.

5Good set of knives

We've had these for a little while now, so far so good, they do get a good amount of use but have remained razor sharp.

4Very good but not perfect.

Well after making lots of noises about buying a good quality kitchen knife (I was leaning towards Wusthof) I was lucky enough to receive this set as a birthday present. Whilst I am a very keen cook, I've never splashed out on serious knives before, so I don't have a lot to compare them to.Some points about the set itself:There is no literature at all with the set regarding the knives (there are instructions re the block). I was slightly surprised by this as given that the knives are marketed as high spec items, you'd imagine they would come with some chat about how to car for and sharpen them. The flipside of this was, that when I emailed I O Shen, I received an extremely informative email back very quickly. Natalie McVeigh who was the person who replied said that she agreed about the lack of literature and that plans were afoot to include this soon.The knife block looks absolutely great and in terms of functionality, seems to work well. I did notice though, that the I O Shen Knives were VERY easy to scratch on the magnetic plates, so you need to be quite careful with them.The other point about the block is that whilst it did feel like a quality item, the sticker on the front was squint. Now I appreciate this is quite nit-picky, but it doesn't say a huge amount for the quality control.On to the knives themselves. The knives really look excellent. They were well packaged in the box and came with plastic guards on the blades. They were EXTREMELY sharp. Certainly the sharpest knives I have ever used. If you run one down your arm (not recommended!) you could easily remove some hair.The knives felt nicely balanced and an excellent weight. The handles are quite chunky but I found them comfortable. I did read another review saying someone had experienced a handle that was not symmetrical but mine all appear to be perfect.In terms of actually using them, I've found the Santoku style knife to be the one I generally reach for. It requires a bit of a different technique compared to a more rounded blade. Less roll and pull, more straight up and down. Certainly, I found it very easy to get on with once I had adjusted slightly.The chef's knife is also excellent. I've been tending to use it more for meat rather than veg and again it was exceptionally sharp.The paring knife is extremely tapered. It is a very useful shape, but I would be quite careful with it as it is extremely thin towards the point.The bread knife has so far been excellent. Initially I thought, I might not use it much as I have a decent bread knife and to touch is didn't feel any sharper. However when you actually try it, it really glides through very well.In terms of the edge, both the chef's knife and santoku knife are noticeably less sharp than when I got them. That's after about 10 days of moderate use. That's not to say that they are dull, far from it. They are still shaper than my other knives, including those that have been recently sharpened on the whetstone.Overall, I'm very impressed with the set and I'm sure I'll be using them for years to come. I just hope that I am able to sharpen them properly when the time comes.
